- Yolks - 8 pcs.
- Sugar - 140 g
- Vanilla pod - 1 pc
- White port wine - 100 ml
- Paspberry - 40 g
- Strawberry - 80 g
- Sugar powder - 10 g
- Mint - 4 sprigs
Step 1. Separate the yolks from the whites in two different bowls.
Step 2. Add the sugar to the yolks, whisk stir until smooth , then add the Port wine and stir again.
Step 3. Cut along the vanilla pod , knife clean the seeds and add them to the bowl with the yolks . Put the mass in a water bath , the water should barely simmer . Warm up , stirring constantly . When the mass thickens , and its volume will increase , remove the bowl. It will take about 10 minutes.
Step 4. Put sabayon in dessert form.
Step 5. Protein whip whisk until thick foam, if you add a whisper of salt - It will be easier and faster.
Step 6. Wet the berries in the foam of whites. Then paneer them with sugar.
Step 7. Put the berries in each serving of sabayon and garnish with a sprig of mint.
