Fish ragout zarzuella

The dish of the Catalan cuisine — delicate and fragrant fish ragout of cod fish stew in white wine with the addition of prawns, mussels, vegetables and herbs.

Ingredients:
  • Cod fillet - 280 g
  • Tiger shrimps - 110 g
  • Argentine red shrimps - 4 pcs
  • Olive oil - 60 g
  • Onion - 60 g
  • Mini-squids frozen - 320 g
  • Garlic - 20 g
  • Tomatoes Beef - 480 g
  • Parsley fresh leaves - 40 g
  • White wine dry - 120 ml
  • Mussels - 160 g
  • Clams fresh - 160 g
  • Leek - 25 g
  • French baguette - 80 g

Recipe

Step 1. Cod fillet cut into large rectangles. Cut squids into triangles.



Step 2. Cut tomatoes into large cubes, onion into middle cubes, cut garlic into halves (do not peel). Divide parsley leaves from parsley stems and chop separately.



Step 3. Pour olive oil into a saucepan, add garlic, cod, shrimps, onions and parsley stems and fry. Add squid, tomatoes, pour in wine and cook for 20-30 min.



Step 4. Add parsley leaves, mussels and clams and cook for 5 more min. In the very end add leek. Mix.



Step 5. 
Slice baguette and slightly toast in an oven. Pour the soup into a plate. Serve with baguette slices.
